Ruby Street Brewing got me back in the saddle again without getting a dime from me. This outstanding service is why I will stick with them when I’m ready for next system. My Experience with Ruby Street Brewing

In the middle of August, 2022 I made the decision to step up from a popular and capable all-in-one 5 gallon electric brewing system to a professional quality three vessel 10 gallon system.  I had come across Ruby Street Brewing months earlier and was constantly reviewing their offerings, from 1 BBL systems down to their smaller 10 and 15 gallon systems.  I wanted to learn to brew and hone my skills on a three vessel system and was interested in propane to speed up the brew day without the infrastructure to support a 240 volt system.  I settled on the Ruby Pro 15, the smaller but still equally shiny 1/3 BBL brother of the Ruby Pro Nano 1 BBL system.  During my decision process I had requested some local contacts for Ruby Street customers.  I was provided two contacts, both in Wilmington NC and both had excellent impressions of their Ruby Street systems.  One turned into an invitation to visit and tour the brewery to see the system in person, an electric Ruby Pro Nano 1 BBL system (my thanks to the very accommodating folks at Outer Dunes Brewing in Wilmington).

Ruby Street quoted a September 9th ship date which was met to the day.  I thought this was impressive considering the issues everyone is having with the supply chain.   During the week the system was being built, Brian from Ruby Street sent me a Google Drive link that shared photos of my build.  Each day, a new set of photos would be uploaded.  The photos provided an appreciation of the skill and expertise that went into the design and execution of this system.  Brian was in touch several times during this week via email to review progress.  After about a week from shipping (Colorado to Eastern North Carolina), the system arrived palletized in perfect condition.  Even the custom made pallet was impressive.  The system comes with a detailed and well written User Guide that goes through the brief final assembly, initial setup, brewing and cleaning processes. 

At this point, I have three batches on the system, each having gone very well, despite some rookie mistakes on my part.  I adapted the BeerSmith© equipment profile Ruby Street published to add to my Brewfather© app. The first batch did not have good efficiency due to a mistake I made with a too coarse crush (fixed with some DME).  The second and third batches had good efficiency and met pre and post boil gravities.   I am very impressed with how well the grain bed establishes itself with the mash tun’s false bottom and the consistency of temperature maintained during the mash.  With the propane system, you can throttle back the gas volume to get a low flame on the mash tun while increasing the flow rate through the wort pump to achieve a robust vorlauf.   The digital control system automatically ignites the system’s three 10-inch burners to maintain constant temperatures for all three vessels.  The temperature sensor for the mash tun is placed immediately before the wort pump so that you know the temperature of the wort being added to the top of the grain bed.  My pre-boil wort has been crystal clear.  The grain bill for the batches I have brewed has not yet included wheat or other grains that can cause problems with the mash and sparge but I am not anticipating problems with the Ruby Pro 15 system.   Sparging has gone well.  I am doing my first fly sparges rather than the batch sparges I was performing on the all-in-one.  Controlling the flow of the sparge water from the HLT to match the wort flow from the mash tun to boil kettle has been easy to get setup.  Boils have been a pleasure as well.   The power of the propane system shines in its ability to quickly get up to mash, mash out/sparge and boil temperatures.   Half my brew day before on the 120 volt electric system was spent waiting to reach set temperatures.

It’s clear that Ruby Street produces a high quality product based on years of design, build and brewing experience.  Their components are excellent and the quality of their build is exceptional.   I highly recommend both the products and the company.  Everyone I had contact with at Ruby Street has been professional and eager to provide a high level of customer service.  They seem like very competent and pleasant people that enjoy building, selling and supporting their brewing systems.  I am very satisfied with my Ruby Pro 15 and encourage home brewers and small breweries to consider Ruby Street Brewing.  They have a diverse lineup of systems that fit the needs of a home brewer wanting to step up to a 10, 15 or more gallon system or a small brewery wanting to brew on a 1+ BBL system for production or research/development purposes.

We bought our Ruby Street in 2015 and opened our brewery / taproom in 2016 with a goal of 12 - 16 barrels a month in a small taproom and a plan to sell it all (beer) in house… which is what we were able to do in a 400 square foot taproom and 400 square foot brewery. We created a community following and quickly outgrew our original location.

We expanded and opened a 2nd location in 2018… 4200 square foot brewhouse with a 15-barrel brewery and taproom with approx. 2400 square foot indoor space with 36 taps and a large outdoor space. We recently added a large outdoor stage and have music regularly on Friday and Sat night.

Both breweries / taprooms were located in the same town so we competed against ourselves very well with both breweries being very successful. We recently sold our original location and moved the Ruby Street to our large brewery for small batch beers.

We started the 2nd location with 4 x 15 bbl fermenters and now have added 3 x 30 bbl fermenters, 2 x 2 bbl fermenters, and just ordered 2 x 7 bbl fermenters. We are planning adding additional 30 bbl fermenters in 2021 and 2022.

We were honored as the 14th (initially named 17, but later as #14 after final tally) fastest growing craft brewery in 2019. In 2020 we were likely in the top 50 again, but the list was never released.

Our Ruby Street System was a great system and a great purchase that let us create great beers and provided the foundation propelling us to 3rd Planet Brewing in 2021. We pride ourselves on community, and host monthly events raising money for charity. We only have 1 television outside that is rarely on. We have great community support and host weekly trivia, a weekly run club, and most recently a bike club as well as monthly yoga, paint classes, and fitness boot-camp. We now can beer and sell 4-packs out of the taproom and in distribution. We distribute beer from Panama City to Pensacola and sell our beer in Whole Foods as well as many other locations.
